Easy Stuffed Bell Peppers Ingredients
Making these easy stuffed bell peppers isn’t as difficult as it may seam. The ingredients are used are similar to making a standard bolognese sauce.
- 500g vegan or meat mince
 - drizzle of vegetable oil
 - 1 large onion, chopped
 - 2 garlic cloves
 - 2 x 400g cans chopped tomatoes
 - 1 tbsp dried oregano
 - 1 vegetable stock cube
 - 4 mixed peppers
 - 100g vegan or dairy cheese
 

How to Make Jack O Lantern Stuffed Peppers
- STEP 1: Cut the tops off the peppers (keeping the tops to one side) and remove the seeds and any white flesh from inside. Use a small sharp knife to carve spooky Halloween faces into the sides. Chop any off-cuts into small pieces and set aside.
 - STEP 2:Heat oven to 200C/180C fan/gas 6 and heat the oil in a large pan. Add the onion and cook for a few mins to soften. Follow this with the garlic and vegan or meat mince, depending on whether you’re making the meat or vegan option. Once the mince is browned, add the tomatoes, oregano and stock cube. Season as you like and let simmer for 30 mins.
 - STEP 3: When the mince is cooked, divide it between the softened peppers.Replace the lids, using cocktail sticks to secure them in place, and put the peppers in a deep roasting tin for 10 minutes with the carved faces facing upwards and sprinkled with your choice of cheese.

You can serve these hot or leave them to cool and enjoy chilled. You can also make them your own by choosing different colored peppers for the Halloween Jack o Lantern stuffed peppers or stick to all the same color, whether it’s orange, yellow, green or red bell peppers.
