Ingredients (Serves 8–10)

To make the cake you will need:

2 medium ripe bananas (mashed)

2 large carrots (about 200g, finely grated)

2 large eggs (or 2 flax eggs for vegan)

3 tbsp olive oil or melted coconut oil (I always use this coconut oil, which I use for almost all of my baking recipes)

½ cup raisins, chopped dates, or sultanas (natural sweetness)

1 ½ cups wholemeal flour (or oat flour/ground almonds for gluten-free)

1 ½ tsp baking powder

½ tsp baking soda

1 tsp cinnamon

½ tsp nutmeg

Pinch of salt

Optional: ½ cup chopped walnuts or pecans

For the topping:

1 cup thick natural yogurt (Greek-style works best)

1–2 tsp honey or maple syrup (optional, for a touch of sweetness)

Optional garnish: grated carrot curls, chopped nuts, or a sprinkle of cinnamon

How to Make Healthy Sugar-Free Carrot Cake

Preheat oven to 180°C (350°F). Grease and line a round cake tin or loaf tin.

In a large bowl, mash bananas until smooth. Whisk in eggs, oil, and vanilla.

Stir in the grated carrots and dried fruit.

In another bowl, combine the flour, baking powder, baking soda, spices, and salt.

Gently fold dry ingredients into the wet mix. Add nuts if using. Don’t overmix.

Pour into prepared tin and bake for 35-40 minutes (loaf tin may take longer) until a skewer comes out clean.

Cool completely before frosting.

How to Make the Yogurt Topping

You can either make the topping and leave in the refrigerator while the cake is cooking or you can make the topping just before spreading on the cake. I like to make the yogurt topping just after I’ve made the cake mix and placed it in the oven. I make the yogurt topping and keep it refrigerated because it helps to set the yogurt and allows the honey or maple syrup to really sweeten it too. Although you don’t have to add honey or maple syrup – it’s completely optional.

To make the yogurt topping, mix yogurt, vanilla, and honey/maple syrup (if using). Spread over cooled cake and finish with nuts, seeds or a dusting of cinnamon. I love sprinkling pumpkin seeds on top of the yogurt topping!

Storing and Freezing Suggestions

Store the carrot cake in the refrigerator for up to 3-5 days. This cake needs to be refrigerated because of the yogurt topping.

You can also freeze this cake – it freezes really well. In order to freeze this cake you will need to freeze without the yogurt topping. Either freeze whole or cut the cake into individual slices and then freeze in an airtight container. Use within 3 months and defrost fully before eating.
