I don’t know about you but I feel that chocolate brownies and blondies are one of the best desserts when it comes to indulgent sweet treats. So recently when I was in the kitchen, wanting to create healthy peanut butter blondies, I put together this no-bake sugar-free blondies recipe. It is the best blondies recipe I’ve ever tried and it’s also sugar-free, uses only natural ingredients and perfect for kids too!
Protein Blondies
Not only are these protein blondies a great, guilt-free dessert, they also make a great high protein snack too. To increase the protein you can add in more nuts and seeds or even a spoon of your favorite protein powder. I’ve added these notes and substitute ideas to the “tips” below the recipe.

It’s sticky and sweet like blondies usually are but this recipe leaves you with lots of options to customize the ingredients you use in order to create the texture you want. I’ve listed more tips on how to customize this recipe below but under the “tips” section below. Healthy Peanut Butter Blondies Recipe
Ingredients
- 1 cup pitted dates about 180 g, Medjool or soft
- ½ cup peanut butter about 128 g, smooth works best
- 3 tbsp honey or to taste, depending on sweetness of dates
- 2 tbsp coconut oil melted
- ½ cup cornflour cornmeal/corn flour (about 65 g – can lightly toast for nutty flavor)
- Pinch of salt
- Optional: ½ tsp vanilla extract or a sprinkle of cinnamon

How to Make Healthy Peanut Butter Blondies
1. Prepare dates: If dates are dry, soak in warm water for 10 minutes, then drain well.
2. Blend the base: In a food processor, blend dates, peanut butter, honey, and coconut oil until you get a thick, sticky paste.
3. Add cornflour and salt. Pulse until fully combined. The mixture should be thick enough to press into a pan. (If too soft, add a little more cornflour; if too dry, add a spoon of peanut butter or honey.)
4. Set in pan: Line a small square pan (8×8 in / 20×20 cm) with parchment paper. Press mixture evenly into the pan, smoothing the top with a spatula.
5. Chill: Refrigerate for at least 2 hours (or freeze for 45 minutes) until firm.
6. Cut & serve: Slice into bars or blondie squares. Store chilled in the fridge.

Tips for Customizing these Homemade Healthy Peanut Butter Blondies
Toasted cornflour
Although you can add the cornflour raw to your food processor when making the peanut butter blondies, if you want to give your blondies a nutty flavor then try toasting the cornflour before adding it to the food processor. Lightly toast the cornflour in a dry pan for 2–3 minutes before adding—it brings out a warm, nutty flavor, making it more like regular blondies.
Coffee version
For more richness, depth and a subtle taste of coffee, try adding coffee to this recipe. Dissolve 1 tsp instant coffee in 1 tsp hot water, then blend into the date mixture before adding cornflour. It adds depth without overpowering the taste.
Extra texture
If you want to give your peanut butter blondies more texture then stir in chopped nuts or seeds for added crunch, or extra date pieces to make them more gooey and sticky, before pressing into the pan.
Extra Protein Blondies
This blondies recipe works really well as a protein blondies snack. To increase the protein, make sure you use pure natural peanut butter. You can also add in a spoon of protein powder to the mix, nuts, seeds, or chia. You might also choose to substitute part of the cornflour with ground almonds or protein powder.
