Easy No-Bake Cookie Dough Recipe
I don’t know about you but I feel that cookie dough is one of the best desserts when it comes to simple sweet treats. So recently when I was in the kitchen, wanting to create healthy peanut butter cookie dough for an afternoon treat to enjoy with my coffee, I put together this no-bake sugar-free cookie dough recipe. It is the best healthy cookie dough recipe I’ve ever tried and you can also make it sugar-free by adding sugar-free chocolate chips. Using only natural ingredients this recipe is ideal for for kids too!

Healthy Peanut Butter Cookie Dough Balls
Not only are these protein cookie dough balls a great, guilt-free dessert, they also make a great high protein snack too. To increase the protein you can add in more nuts and seeds or even a spoon of your favorite protein powder. I’ve added these notes and substitute ideas to the “tips” below the recipe.

Peanut Butter Cookie Dough Recipe
This recipe has that delicious texture that regular cookie dough has but without all the sugar and raw eggs. This recipe also leaves you with lots of options to customize the ingredients you use in order to create the texture you want. I’ve listed more tips on how to customize this recipe below but under the “tips” section below. Once you’ve learned how to make this egg-free easy peanut butter cookie dough recipe, you can easily switch up the ingredients to alter the texture and taste so that you never get bored!

Ingredients (makes 30 cookie dough balls)
No-Bake Healthy Peanut Butter Cookie Dough
Ingredients
- 1 cup pitted dates about 180 g Medjool or soft
- ½ cup peanut butter about 128 g smooth works best
- 3 tbsp honey or to taste depending on sweetness of dates
- 2 tbsp coconut oil melted
- ½ cup cornflour cornmeal/corn flour about 65 g – can lightly toast for nutty flavor
- Pinch of salt
- Optional: ½ tsp vanilla extract or a sprinkle of cinnamon

How to Make Healthy Peanut Butter Blondies
1. Prepare dates: If dates are dry, soak in warm water for 10 minutes, then drain well.
2. Blend the base: In a food processor, blend dates, peanut butter, honey, and coconut oil until you get a thick, sticky paste.
3. Add cornflour and salt. Pulse until fully combined. The mixture should be thick enough to mold into cookie dough balls. (If too soft, add a little more cornflour; if too dry, add a spoon of peanut butter or honey.) Finally, add in the chocolate chips. I like these sugar-free chocolate chips but you can use any chocolate chips you like.
4. Now it’s time to mold your cookie dough into balls. I recommend using an ice cream scooper for this to make it easier but you can also use just your hands. You can either place the cookie dough balls on a large plate or baking tin or add to food storage containers. Alternatively, you don’t have to mold the cookie dough into balls. You can also add the cookie dough to a jar and scoop out with a spoon when serving.
5. Chill: Refrigerate for at least 2 hours (or freeze for 45 minutes) until firm.
6. Enjoy!

Other Recipe Ideas for this Homemade Healthy Peanut Butter Cookie Dough
Toasted cornflour
Although you can add the cornflour raw to your food processor when making the peanut butter cookie dough, if you want to give your cookie dough a nutty flavor then try toasting the cornflour before adding it to the food processor. Lightly toast the cornflour in a dry pan for 2–3 minutes before adding—it brings out a warm, nutty flavor, making it more like regular cookie dough.
Coffee version
For more richness, depth and a subtle taste of coffee, try adding coffee to this recipe. Dissolve 1 tsp instant coffee in 1 tsp hot water, then blend into the date mixture before adding cornflour. It adds depth without overpowering the taste.
Extra texture
If you want to give your peanut butter cookie dough more texture then stir in chopped nuts or seeds for added crunch, or extra date pieces to make them more gooey and sticky, before pressing into the pan. These make perfect snack balls that you can easily take with you when on the go.
Extra Protein Cookie Dough
This cookie dough recipe works really well as a protein snack too. To increase the protein, make sure you use pure natural peanut butter. You can also add in a spoon of protein powder to the mix, nuts, seeds, or chia. You might also choose to substitute part of the cornflour with ground almonds or protein powder.
