No-Bake Healthy Peanut Butter Cookie Dough
This delicious peanut butter cookie dough recipe is healthy, doesn't contain eggs and contains a lot less sugar than traditional cookie dough recipes. The only refined sugar used in this recipe is in the chocolate chips.
- 1 cup pitted dates about 180 g Medjool or soft
- ½ cup peanut butter about 128 g smooth works best
- 3 tbsp honey or to taste depending on sweetness of dates
- 2 tbsp coconut oil melted
- ½ cup cornflour cornmeal/corn flour about 65 g – can lightly toast for nutty flavor
- Pinch of salt
- Optional: ½ tsp vanilla extract or a sprinkle of cinnamon
